I love making my own energy bars, they are easy to make, healthy, low cal, high protein, and taste better than Larabars. I love to eat these before or after a workout for a little energy. When I was a runner, I would make these into little balls instead of bars to have as fuel during my long runs. I will probably use these as fuel during my training for my Century Ride this year. They don’t cause any stomach problems like the gels such as GU, and being all natural and raw they are easily digested and broken down quickly for instant fuel.
Here is the recipe for my most recent batch.
1 cup fresh or soaked dates
1/4 cup almonds
1/4 cup dried fruit (I used dried, unsweetened Mango)
1/4 cup dried, unsweetened coconut
1/4 cup ground flaxseed
1/4 cup hemp or protein powder
1/4 cup sesame seeds
1 tsp lemon juice
Sea salt to taste
You can add 1 TBSP of Agave Nectar or Honey if you want them on the sweeter side.
Blend all the ingredients together in a food processor till it is a dough like consistency. Roll into a huge ball then flatten out to the desired thickness you want the bars. I then take a huge knife and spray it with cooking spray. This makes it easier to cut out the bars with out the mixture sticking to the knife. Cut out the bars to your desired shape/size then wrap individually in wax paper. I then place them all in container with a lid and keep them in the freezer. The great thing about these too is that they don’t get super hard in the freezer, so you can eat them right out of the freezer without having to thaw them out first.
