Sundays during my childhood were always about two things: pancake breakfasts and housecleaning day. Today, as an adult, Sundays are about relaxing. I did wake up craving pancakes today. After scouring the pantry and fridge, I was able to pull the ingredients together to come up with these Paleo Pancakes. They are gluten free, sugar free, but not taste free! They were surprisingly more tasteful than I thought they would be, thanks to the addition of some almond butter. You make these a great after workout breakfast by adding protein powder into the mix for some Paleo Protein Pancakes!
This recipe will make three medium or two larger pancakes. Just double everything to make more pancakes.
1 Cup Almond Flour
1/4 tsp of Baking Powder
1/4 tsp of Salt
1/4 tsp of Cinnamon (optional)
1-2 tsp of Sugar Substitute (I use Stevia)
1/2 tsp of Vanilla Extract
1/4 Cup of Almond Milk
1 Tblsp of Coconut Oil (melted)
1 Tblsp of Almond Butter
Sift all the dry ingredients together first in a separate bowl. You can then add in all the wet ingredients and whisk together so there are no large lumps. For fluffier pancakes, whisk the whites of the eggs alone until they peak, then fold into the mixture last.
Pour into a hot griddle or pan with a little coconut oil or butter. Keep them on the smaller side so they are easier to flip. Cook until they are golden brown on each side and seem cooked inside. Top with butter and some agave syrup (less sugar than maple syrup). Enjoy!
