These muffins are Clean Eating, Paleo, Gluten Free, Sugar Free and chock full of protein and deliciousness!
Preheat oven to 375. In a bowl combine 1 cup of almond flour, 1 cup of shredded coconut, 1/2 to 1 Cup of slivered/sliced almonds, 1 tsp of cinnamon and 1 1/2 tsp of baking powder. Mix well and set aside.
In a separate bowl add four egg yolks (place the whites aside in a separate bowl for use later), 1 tblsp of Truvia Sweetener (or sweetener of your choice, you can use agave syrup), 1 tblsp of orange extract. 1/4 cup of melted coconut oil, and 1 tblsp of almond butter. Blend all these together till well mixed.
Whip the four egg whites till thick and frothy and add to the liquids. Then add the wet ingredients into the dry ingredients and blend well so there are no lumps. Spoon into coated muffin tins, or muffin cups and bake for about 20 minutes or until a toothpick comes out clean.
