I needed to come up with another breakfast option for this week that didn’t involve eggs (the reason behind that is a whole other blog post, yet to come). So I discovered the idea of Paleo Breakfast Cereal. And it sounded delicious and right up my alley.
Here is the basic recipe. Feel free to tweak it to your liking, adding any type of nuts, seeds and dried fruits you like.
- 1 cup raw sunflower seeds
- 1 cup raw pumpkin seeds
- 1 cup slivered almonds
- 1 cup raw walnuts
- 1 cup of shredded, unsweetened coconut
- 1 cup of almond meal or flour
- 2 tablespoons of carob powder
- 1/2 cup of coconut oil (melted)
- 1/2 cup of honey or agave syrup
- 1 – 2 tablespoons of almond butter (or nut butter of your choice)
- 1 – 2 teaspoons of cinnamon
- 1 teaspoon of nutmeg
- 1 tablespoon of Vanilla Extract
- Sea Salt to taste
Preheat oven to 250 (or higher depending on your stove). Mix the nuts, seeds, coconut, almond flour, carob powder, spices and all dry ingredients into one bowl. Mix well with a fork to get the nuts and seeds coated with everything. In a separate bowl mix the wet ingredients together very well. Add the wet ingredients to the dry and mix well, coating all the nuts and seeds with the liquid.
Place tinfoil down on a cookie sheet and spray with cooking spray. Flatten out the mixture onto the cookie sheet as shown in the first picture and bake in the over for 20 minutes. Then take out, stir everything, basically flipping it over and place back in the oven. Bake for another 20 minutes. You will have to watch it, as I have seen similar recipes with different oven temps and baking times. Mine started to burn so I had to take it out earlier than I thought it would have needed. Your house will smell AMAZING while this is baking!
Serve in a bowl with your favorite milk such as almond, soy or coconut. I added raisins but you could add other dried fruit like dried cherries, etc. Enjoy! Its also great as a topping for yogurts or just to snack on.
