OktoberFIT Day 3: Clean Eating

Clean eating? What’s that? Is this just another fad diet?

The new buzz word in healthy eating and weight loss is “clean eating”, but what is that? You have probably seen the phrase used in tweets, Facebook posts, pins on Pinterest and more.  It’s more of an eating lifestyle, than it is a “diet”. Eating clean is basically eating foods in the purest and most natural state, without the addition of artificial or processed ingredients like flavorings, added sugar, etc.

You can start incorporating a clean eating plan into your life by adding in things like more fresh, organic produce, eliminate added sugars, use unprocessed flours like almond and coconut flours, and don’t eat foods with ingredients that you can not pronounce or don’t even know what they are.

Here is a simple clean eating recipe that is delicious, vegetarian and easy to prepare.

Portobello Stacks

Ingredients:

  • 2 large Portobello Mushrooms
  • One large tomato
  • 1 Package of Tofu
  • Glove of garlic
  • 1 lemon
  • Basil
  • Balsamic Vinegar
  • Salt and Pepper to Taste

Preheat the oven to 400. Degill the Portobello, sprinkle with salt and a little of the vinegar. Then place in the over for 15 minutes. Meanwhile add the Tofu, lemon juice, garlic and basil together into a food processor and blend until it is the texture of a ricotta cheese. Pull out the mushrooms and spread with the tofu mixture, top with a slice of tomato and a spritz of the balsamic. Place back in the heated oven for another 20 minutes or so till heated, and the tomato gets a little soft. Enjoy!
